Gluten-free Vegan Bread

makes 2 loaves 


2 1/4 teaspoons yeast

1 cup warm coconut milk

2 teaspoons brown sugar

1 cup warm water

5 tablespoons flax meal

3 tablespoons coconut oil

2 teaspoons apple cider vinegar

3 cups gluten-free oat flour

1 cup tapioca starch

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt


Combine the yeast. coconut milk and sugar in a bowl. Set aside. Combine the water, flax meal, oil and vinegar and set aside for 2 minutes. Combine the two mixtures.

Next add the dry ingredients and stir until just combineD (do not over mix).

Spread the bread dough into two greased loaf tins. Let rise in a warm place for 30 minutes.

Bake at 175 C (350 F) for 1 hour. Eat while fresh!
