Carrot Oat Cookies

INGREDIENTS:

2 flax eggs (2 Tablespoons flax meal + 6 Tablespoons water)

1 grated carrot

2 cups gluten free oats

*2 cups gluten free oat flour

1 cup coconut oil

1/2 cup sugar

2 tablespoons golden syrup

2 teaspoons vanilla

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon cinnamon

1/4 cup raisins

1/8 cup chia seeds optional 

METHOD:

Combine all the ingredients in a large mixing bowl. Place by large spoonful's onto a greased baking sheet. Bake for 15- 20 minutes until golden brown.

 

*gluten free oat flour- grind oats in food processor or coffee grinder until a flour-like consistency
