GlUTEN-FREE VEGAN CHOCOLATE CAKE

INGREDIENTS:

2 cups *gluten free flour

1 cup sugar

1/2 cup cocoa powder

pinch of salt

3/4 teaspoon **xanthem gum

2 teaspoons baking powder

2 teaspoons bicarbonate of soda

1 cup oil

2 cups coconut milk

* I use Glutagon Plain Flour (see products page).

** Glutagon flour contains xanthem gum, so omit if using this brand of flour

METHOD:

Combine the sugar and oil. Mix well. Add the dry ingredients and coconut milk. Mix until smooth and lump free. Pour into a greased tin. Bake at 175 C for 35- 40 minutes or until tooth pick comes out clean.
