Lemon lime Pie

 

9 x 9 x 2-inch baking pan (23 x 23 x 5 cm)

 

INGREDIENTS:

 

Crust:

1 1/2 cups (5 oz) finely ground graham crackers/ marie biscuits/ digestive biscuits

5 tablespoons butter

1/3 cup sugar

1/8 teaspoon salt

 

Filling:

3 eggs

400g tin condensed milk

2 Tablespoons lime zest

½ cup lemon juice

 

METHOD:

 

Preheat the oven to 175 C (350 F). melt the butter and combine with the biscuits, sugar and salt. Press into the base of the dish and bake for 10 minutes or until golden brown. Separate the eggs. (Set aside the whites). Beat the egg yolks until light and fluffy. Slowly pour in the condensed milk while beating. Continue to beat for 5 minutes until light and fluffy. Add the lime zest and the lime juice slowly while beating. (do not pour in all at once or it may curdle). Pour the filling into the baked crumb base. Return to the oven and bake for 10- 15 more minutes until set. Cool, chill in the refrigerator and top with fresh cream, lemon slices and grated chocolate!
