Lemon Loaf


Makes 1 loaf




½ cup coconut oil or butter

¾ cup sugar

2 eggs

1 ¼ cup cake flour

1 teaspoon baking powder

½ teaspoon salt

½ cup milk

½ cup of chopped walnuts (optional)

Grated peel (zest) of 1 lemon

Juice of 1 lemon

¼ cup sugar




Pre heat the oven to 175 C (350 F). Cream the butter and sugar together. Mix in the beaten egg. Sift the flour, baking powder and salt together. Add to the butter mixture alternately with the milk, beating constantly. Stir in the lemon zest and nuts (optional). Pour into a greased loaf tin. Bake for 1 hour. Combine the lemon juice and sugar in a separate bowl. Remove the baked loaf from the oven. Poke holes all over the top of the hot loaf with a toothpick or cake skewer. Pour the lemon mixture over the top of the hot loaf immediately, allowing the lemon to soak into the holes. Cool, slice and enjoy!
