Lentil Burgers

 

INGREDIENTS

 

1 cup dried lentils

1 chicken stock cube

1 medium onion

1 Tablespoon dried herbs

1 teaspoon salt’

1 teaspoon pepper

1 medium sweet potato

2 carrots

½ cup rice flour (and flour can substitute)

½ cup seed flour (see recipe)

 

 

METHOD:

Cover lentils in boiling water and 1 chicken stock cube. Soak for 30 minutes. Drain off the excess water. Chop the onion into small pieces and fry it with the herbs and spices. Remove from the heat. Add the grated sweet potato and grated carrots. Add the soaked lentils. Blend all together with a stick blender until roughly combined.

Let cool. Add flours and form into patties. Refrigerate for at least 1 hour before frying. Fry and serve hot with rolls or salad.
