Mince-filled Gem Squash


Serves 2



2 Gem Squash

500 grams mince

2 Tablespoons worcestershire sauce

1 teaspoon garlic powder

salt and pepper

1 Tablespoon mixed herbs

fresh basil

1 tin of tomato and onion

3 Tablespoons peach chutney

glug of red wine



Cut the gem squash in half. Remove the seeds. Place open-side down and steam for 10-15 minutes. Prepare the mince. Fry the mince. Drain off the excess fat. Return to the heat. Add the spices, herbs, chutney, and Worcestershire sauce. Mix and fry for 2 minutes. Add 1 tin of onion and tomato. Reduce heat and allow to simmer for 30 minutes. Remove from heat and add a glug of red wine just before serving. Pour the mince mixture into the gem squash bowls. Top with fresh basil. (optional: Sprinkle with cheese or a dollop of sour cream)
