Dad’s Pancakes

 

Makes 7-10 pancakes

 

INGREDIENTS:

 

1 cup cake flour

1 ½ teaspoons baking powder

¼ teaspoon salt

2 teaspoons sugar

1 egg

1 cup milk

1 Tablespoon oil

 

METHOD:

 

Combine the dry ingredients in a bowl. Beat the egg and milk separately and then add to the dry ingredients. Add the oil. Do not over-mix. Mixture can be slightly lumpy. Pour into a frying pan in ladle-sized portions over a medium heat. When the bubbles pop on the top, flip the pancake over. Cook for 2 more minutes. Remove from the heat. Serve with honey, maple syrup, golden syrup, jam, cinnamon sugar, fresh fruit or any other topping of your choice!
