Prepare your favourite burger patties (I combine mince with an egg, a dollop of chutney, salt and pepper, a squirt of Worcestershire sauce and herbs) and serve with fried polenta as an alternative to your normal burger bun.
How to make the Polenta Buns:
Cook polenta as per the packet instructions the night before. While it is hot and still porridge consistency, pour into a large drinking glass and put in the fridge to set. The following day, remove the polenta from the cup by tipping it upside down. It should come out as one big log-like chunk. Slice the chunk into wheels and fry them for 3-5 minutes per side until crispy and golden. Sandwich your burger patty inbetween two slices of polenta and serve with a side of chips or salad.
